1.Hida Beef
Hida beef is very tasty,with tender meat amd sweet fat.In Gifu,Hida beef is grilled on Pakuba leaves with homemade miso.It’s good with salt and pepper,but this is also delicious.
2.Pickled Steak
This dish is a local food from the Hida region.In the old days,people used to grill frozen Chinese cabbage pickles and eat them.It has a slightly sweet flavour and contains eggs.
3.Keichan
The dish consists of chicken marinated in soy sauce and miso,grilled with cabbage.
4.Takayama Ramen
This is a local gourmet dish from Hida Takayama region.
5.Soba
Soba noodles taste best when grown in a place with clean water.You can eat delicious soba noodles in the tourist spots of Shirakawa-go and Magome-juku.
6.Ayu
Gifu Prefecture has many spots where you can catch river fish.To catch fish,craftsmen make fishing traps out of wood or bamboo, which are called ”Yana”.I’ll introduce three restaurants.
